Banana – Streamed pastry

Ingredients  Quantity
Grinned banana    2 measurement cups
Coconut milk (Coconut 300 grams) 

1 measurement cup

Sea Elephant rice flour   1 measurement cup
Tapioca flour 

5 measurement cups

Pared coconut meat 1/2 measurement cup

 

Methods
 

1. Pell off banana meat and left off banana’s intestine. Then grind only banana meat into paste.
2. Mix grinned banana, Sea Elephant rice flour, Tapioca flour. Then knead it about 15 – 20 minutes until it becomes sticky. Next, put cane sugar, coconut and coconut milk to be mixed together. Then stir it well till the sugar is melt.
3. Prepare 1/2 coconut  1/2 measurement cup and then mix it with salt well for sprinkling on top.
4. Get the mixture into the cup plate and then sprinkle the mixed coconut and salt on top.
5. Steam it on strong fire for 15 minutes and leave it till it is cool. Finally, get it out of the cup plate.


 

Tips

 

1. Do not use banana’s intestine which will give sour taste, rotten meat and have black spot.

2. Choose ripen banana but firm meat.

3. Glossy look, soft, sweet, creamy and tasty with banana smell.

Basket-Shaped Chinese Pudding

Ingredients  Quantity
Sea Elephant glutinous rice flour         1 measurement cup
Sea Elephant rice flour       

1/5 measurement cup

White cane sugar or palm sugar in cakes   175 grams
Water

1 measurement cup

Lard 1 spoon
A small vessel made of banana’s leaves with 2 inches diameter in size 20 pieces

 

Methods
 

1. Mix Sea elephant rice flour and glutinous rice flour with water and knead it for about 10 minutes and leave it at least for about 30 minutes. Next mix it well with
sugar.
2. Apply lard into the banana vessels.
3. Steam it on strong fire for 30 minutes and leave it till it is cool
4. Get the mixture into the cup plate and then sprinkling the mixed coconut and salt on top.
5. Steam it on strong fire for 15 minutes and leave it till it is cool. Finally, get it out of the cup plate.


 

Tips

 1.  If use real palm sugar, it will give a good smell.

 2.  It will look clear and soft with a little sweet taste.

Sticky-Rice Ball with Taro in Coconut Milk

Ingredients  Quantity
Sea Elephant glutinous rice flour      2.5 measurement cups
Steamed taro and grinned 

1.5 measurement cups

Water   10 measurement cups
Pared white coconut

800 grams

Jasmine smell water 2 measurement cups with jasmine Flowers floated on water
Coconut sugar 100 grams
Cane sugar 1.5 measurement cups
Salt 1 tea spoon

 

 

Methods
 

1. Knead well flour mixture into paste, then mould it into small round-shaped and place it on paper.
2. Boil jasmine water and pour it into pared coconut milk. Leave it warm and squeeze out to keep only coconut milk.
3. Get the coconut milk mixed with cane sugar and coconut sugar, salt to become mixture.
4. Boil water and get the round- shaped flour put into the boil water till it floats. Next, take it out to be put into prepared-coconut milk.


 

Tips

 1.  Choose fresh pared coconut to be kept longer.

 2.  Clear, fresh and rich coconut milk with soft flour, sweet and good smell.
